Daily total non-coinbase output value in BTC
Short ranges plot one point per block, about one every ten minutes. Longer ranges plot one point per day, computed from every block in that day. How it is computed depends on the chart: some average, some total the day up, some are a ratio of the day's sums, and each chart says which. Either way a brief spike inside a day is smoothed away.

Definition
How much bitcoin moved in each block. Every transaction spends whole outputs and creates new ones, so change comes back to the sender inside the same total: a wallet sending 0.1 from a 10 BTC output shows as 10 moved, not 0.1. This counts value in motion, not value changing hands.
How it is measured
Total value of all non-coinbase outputs. This includes both the payment and the change output, so it overstates actual economic activity. Still useful for relative comparisons across time periods.
